For a gingerbread house, it also pays to focus on the surface finish of each individual part. That's why we lightly brush them with a mixture of egg, hot water, and cocoa both during baking and again after taking them out of the oven. The contrast of snow-white icing on shiny dark gingerbread gives every gingerbread house a fairytale-like appearance.
If you are baking a larger gingerbread house, leave the glazed parts on the baking sheet for about five minutes after removing them from the oven. Then, carefully remove them with a wide spatula so that the shiny surface doesn't crack.

Tip for you
For glazing, use a soft brush with long bristles and make sure the layer of the mixture is very thin so the gingerbread pieces don't "swim" in it. A very light touch is all it takes.
