You will certainly be pleased to know that mixing icing that will obey your every command is a matter of just a few minutes and that there is no need to weigh or measure anything. Pay sufficient attention to the following videos to ensure your icing turns out well.
Well-prepared icing is the foundation of your successful decoration.
Ingredients:
For preparing basic icing, we need just two ingredients:
1. high-quality powdered or, even better, confectioner's sugar2. egg white
Necessary utensils:
Prepare a small sealable bowl, a small wooden spoon or wider flat teaspoon, a nylon stocking or sock, and (depending on the type of sugar used) a fine metal sieve.
Procedure:
Fill the bowl about halfway with sugar. Use confectioner's sugar right away; sift all other powdered sugars through a sieve.
Let the egg white drain through the stocking, which will catch unwanted loops and fibers that naturally occur in it. Then gradually pour it into the sugar and, by rubbing against the sides of the bowl, combine these two ingredients into a smooth, creamy substance as thick as honey.
It won't take longer than five minutes. Then carefully seal the bowl and let the icing rest for at least three to four hours (ideally overnight) at a temperature of 15-18 degrees.
The sugar will very slowly dissolve in the egg white, giving the icing elasticity and stretchiness - the most important properties for traditional decoration.

Mastering gingerbread icing doesn't have to be complicated! While it's common not to get it perfectly on your first try, don't worry. In the full Gingerbread Academy, I'll show you exactly how to prevent common mistakes and easily fix them if they do happen.
